Method of elaboration
The grapes are harvested by hand and pressed whole according to the "Champagne" method with slow fermentation and maturation on fine lees. The second fermentation takes place in the bottle after the selected batches have been blended. The bottles remain on laths for 18 months before being disgorged and put on sale.
Terroir
The grapes come from a plot of old Pinot Noir vines (from a Champagne selection) located in the Osterberg.
